Ingredients
- 1 block firm tofu pressed and cubed
- 2 tablespoons cornstarch
- 2 tablespoons sesame oil

- 2 tablespoons maple syrup

- 1 tablespoon rice vinegar
- 1 teaspoon sesame seeds
- 2 cups cooked quinoa
- 2 cups mixed greens

- 1 cup sliced cucumber
- 1 avocado sliced
- 2 green onions sliced
Instructions
- Press tofu for 30 minutes then cut into cubes
- Toss tofu cubes with cornstarch until evenly coated
- Heat sesame oil in pan over medium high heat
- Cook tofu until golden brown and crispy about 8 10 minutes
- Whisk together soy sauce maple syrup ginger garlic and rice vinegar
- Pour sauce over cooked tofu and stir until coated
- Cook for 1 2 minutes until sauce thickens
- Assemble bowls with quinoa as base
- Top with mixed greens carrots cucumber and avocado
