Ingredients

  • 14 oz firm tofu pressed and cubed
  • 2 tbsp cornstarch
  • 2 tbsp sesame oil
  • 3 tbsp soy sauce
  • 2 tbsp maple syrup
  • 1 tbsp grated ginger
  • 2 cloves garlic minced
  • 1 tbsp rice vinegar
  • 1 tsp sesame seeds
  • 2 cups cooked quinoa
  • 2 cups mixed greens
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 1 avocado sliced
  • 2 green onions sliced

Instructions

  1. Press tofu for 30 minutes then cube and toss with cornstarch
  2. Whisk together sesame oil soy sauce maple syrup ginger garlic and rice vinegar for sauce
  3. Heat oil in pan and cook tofu until crispy on all sides
  4. Add sauce to pan and cook until tofu is coated and glaze thickens
  5. Assemble bowls with quinoa as base then arrange greens carrots cucumber and avocado
  6. Top with crispy tofu and garnish with green onions and sesame seeds
