Ingredients
- 14 oz firm tofu pressed and cubed
- 2 tbsp cornstarch
- 2 tbsp sesame oil
- 3 tbsp soy sauce
- 2 tbsp maple syrup
- 1 tbsp grated ginger
- 2 cloves garlic minced
- 1 tbsp rice vinegar
- 1 tsp sesame seeds
- 2 cups cooked quinoa
- 2 cups mixed greens
- 1 cup shredded carrots
- 1 cup sliced cucumber
- 1 avocado sliced
- 2 green onions sliced
Instructions
- Press tofu for 30 minutes then cube and toss with cornstarch
- Whisk together sesame oil soy sauce maple syrup ginger garlic and rice vinegar for sauce
- Heat oil in pan and cook tofu until crispy on all sides
- Add sauce to pan and cook until tofu is coated and glaze thickens
- Assemble bowls with quinoa as base then arrange greens carrots cucumber and avocado
- Top with crispy tofu and garnish with green onions and sesame seeds
