Ingredients
- 2 cups fresh spinach, washed
- 1 cup water
- 1 inch ginger, chopped
- 2-3 green chilies, chopped
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- Salt to taste
- 200g firm tofu, cubed and pan-fried until golden
- 2 tablespoons cashew cream (optional for extra richness)
- 1/2 teaspoon sugar
Instructions
- Blanch spinach: Bring 1 cup water to boil, add spinach and cook for 2 minutes. Drain and immediately transfer to ice water. Drain again and blend with ginger and green chilies into a smooth puree.
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onion and sauté until golden brown, about 5 minutes.
- Add tomato puree and cook until the oil separates, about 5-7 minutes.
- Add garam masala, turmeric, coriander powder, red chili powder, and salt. Cook for 1 minute.
- Pour in the spinach puree and mix well. Simmer for 5 minutes. If using cashew cream, stir it in now.
- Add sugar and the pan-fried tofu cubes. Mix gently and cook for another 3-4 minutes.
- Adjust seasoning and serve hot.
