Ingredients

  • 1 block firm tofu pressed and cubed
  • 2 tablespoons cornstarch
  • 2 tablespoons sesame oil

  • 2 tablespoons maple syrup
  • 1 tablespoon grated ginger
  • 2 cloves garlic minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame seeds
  • 2 cups cooked quinoa
  • 2 cups mixed greens
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 1 avocado sliced
  • 2 green onions sliced

Instructions

  1. Press tofu for 30 minutes then cut into cubes
  2. Toss tofu cubes with cornstarch until evenly coated
  3. Heat sesame oil in pan over medium high heat
  4. Cook tofu until golden brown and crispy about 8 10 minutes
  5. Whisk together soy sauce maple syrup ginger garlic and rice vinegar
  6. Pour sauce over cooked tofu and stir until coated
  7. Cook for 1 2 minutes until sauce thickens
  8. Assemble bowls with quinoa as base
  9. Top with mixed greens carrots cucumber and avocado
